Nicholas SKajewski | Chef, Owner

Nicholas has been involved in the culinary industry for over 8 years, and is currently the Executive Chef of Avera McKennan; overseeing 3 (soon to be 5) sites as well as a team of over 40 employees. Nicholas has a passion for culinary ingenuity and being on the forefront of all things technology. He enjoys designing and maintaining websites, professional social media accounts and creating logos by utilizing his vast knowledge of technology and background in marketing to enhance the success of each business. When Nicholas is not at Avera, he can be found creating custom menus and meals for private clients, catering events from intimate in-home dinners to elaborate wedding receptions, teaching cooking classes, mentoring culinary students, and constantly researching and refining his craft. Nicholas also truly enjoys spending time with his wife and daughters camping, playing and exploring.

Benjamin Schempp | Lead Sommelier & Mixologist

Benjamin lives within the art of diverse and detailed libations. He has been a leader in the service industry for over 9 years, specializing in mixology for 6 of those. He currently works as the Bar Manager at Carnaval Brazilian Grill. Benjamin holds a level 1 sommelier status, and is continually developing his vast knowledge of wines around the world. He has been an integral part of the Sioux Falls cocktail scene, and many attribute his creativity and personality as a key force behind the recent local explosion of craft cocktails. Taking inspiration from the Chefs he works with, and his limitless research, Benjamin works outside the norm to craft handmade ingredients for his beverages that set them above the rest. When Benjamin is not working, you can find him sipping on fine tequila with his fiance, playing with his golden retriever, and watching the Knicks and Bengals.

Logan Bengtson | Mixologist & Service specialist

Logan is known for being able to handle any aspect of service, as he has seen it all. Logan’s personality guides him to be the key player in ensuring all details are perfect for any event. From napkin folds and crisp linens to the way the staff dresses and carries conversation. No detail goes unnoticed and he is dedicated to pristine service at his events. Passionate about exploring the world, Logan has been training as a mixologist for over 4 years, taking inspiration from bartenders he meets throughout his travels. Logan strives to always advance his skill set to the next level by pairing detailed research with personal innovation and passion. When Logan is not working as the assistant General Manager at Sickies Garage, you can find him spending quality time with his girlfriend, listening to vinyl, and fixing anything broken.

ADAM Schumacher | sous chef

Adam has been cooking professionally for the past 7 years, and he is the current Sous Chef at Avera McKennan Behavioral Health Center. He is very passionate about all things culinary, and as an avid hunter, specializes in preparing wild game in new and unique ways. Adam finds enjoyment in sharing his own cooking techniques and methods with all those who will listen. Adam recently has started to dive into the world of local breweries, challenging himself to create dishes paired with trendy brews. He one day hopes to start brewing his own beer! When Adam is not working, he is spending time with his wife and daughters teaching them all he knows about food! He and his family also enjoy camping, fishing, and anything outdoors!
